Hazelnut cookies

These cookies are a slight variation from the ones already published here. Some changes have been made: sugar by honey, any chocolate, the amount of rice flour has been decreased and olive oil has been replaced by coconut oil. In this way biscuits are healthier.

gluten-free, dairy-free, eggs-free, full GAPS diet



160 gr. almond flour previously prepared
50 gr. hazelnut flour previously prepared
75 gr. honey
20 gr. coconut butter (better desodorized)
1 pinch of vanilla or cinnamon


Mix the hazelnut flour, almond flour and spices.

Melt coconut butter and dilute honey with it.

Pour the liquid to the flour and mix well for some minutes.

Put the mixture on a oven paper. Spread well with your hands or with a rolling pin to get a thickness of 2 cm. Make shapes with molds for cookies.

Put the biscuits on an oven plate with oven paper and bake at 160ºC for about 8 minutes with the oven program for cookies. Attention, time and temperature can change depending on the oven.
