Dates Sweets

Dates can be the main ingredient to make so many different sweets: truffles, chocolate or carob cream, marzipan, turron (spanish traditional Christmas sweet), etc.
Dates are a very much healthier option to sweeten than sugar. Date puree tastes delicious as is, and you can mix it with carob or cacao powder, coconut, potato, sweet potato, cacao or coconut butter, nuts powder, banana, orange juice, etc., depending on your intolerances, in order to obtain different recipes.

Option 1: With potato or sweet potato and carob or cacao


Mixing potato or sweet potato and carob or cacao with dates you get a smooth and creamy paste that you can use to do truffles, turron and other sweets. It tastes quite different of real truffles, but it’s also very good and very much healthier!

Ingredients:

300 gr potato or sweet potato
400 gr pitted dates (without pits)
70 gr cacao and/or carob powder
For frosting: carob powder, shredded coconut, coconut butter 

Instructions:

Cook potatoes and blend them.
Blend dates with the potatoes to get a puree. 
Add carob or cacao powder and mix all together.
The mixture must stick together but it mustn’t stick on your fingers.
Make small balls and cover with the selected frosting.
Keep in the fridge during 2 days or 1 week in the freezer.

Comments:

* Rather better don't soak dates for this recipe, because the batter may be too sticky to make the little balls.
* Be careful with dates if you have a gut dysbiosis with candida or other yeasts.
* My favorite kind of dates for this recipe is deglet noor dates. Pay attention to mix potatoes with dates before blending, because sometimes the food processor hasn't enough power to blend the deglet noor dates alone, and the engine may be damaged!

 

Option 2: With carob or chocolate and coconut or cacao butter


This mixture you get a cream to be spread, stuffed, do a fondue, etc.
When it gets a little bit colder, the cream becomes harder, then you can do turron (Spanish traditional Christmas desert).

Ingredients:

40 pitted dates (without pits)
60 gr cacao or/and carob powder
100 gr cacao or coconut butter
optional: 40 gr liquid honey (if you like very sweet), orange juice, banana purée

Instructions:

Melt butter.
Soak dates overnight. Blend a little bit dates. 
Add butter, carob or cacao powder and blend again all together to get a puree.
Turron: Place the mixture in a rectangular mold for turron or cake. Let it cool.

Comments:

* Coconut and cacao butter become hard in winter if it’s a little bit cold inside. If you want a cream, you should warm it in a water bath before serving.
* Rather better to peel dates, because skin is quite indigestible for some persons.
* Be careful with dates if you have a gut dysbiosis with candida or other yeasts.
* My favorite kind of dates for this recipe is mazafati dates for the cream, and deglet noor for the turron. If you use other kind of drier dates such as deglet noor be careful, because sometimes the food processor hasn't enough power to blend the deglet noor dates alone, and the engine may be damaged!




 

Option 3: With shredded coconut and coconut butter


The resulting mixture looks like a marzipan paste with which you can do some truffles, small squares, marzipan shapes, turron, etc.

Ingredients:

250 gr pitted dates (without pits)
60 gr cacao or coconut butter
80 gr shredded coconut
 

Instructions:

Melt butter.
Soak dates overnight. Blend a little bit dates. 
Add shredded coconut and butter and mix all together to get a puree.

Comments:

* Rather better to peel dates, because skin is quite indigestible for some persons.
