Ice Cream and Cream sweetened with dates

This is a recipe for making dairy free ice creams using only dates to sweeten.
With this recipe you can make ice cream of different flavours: chocolate, strawberry, vanilla ... Simply we must choose the corresponding ingredient.
It is also possible to make creams, for example, creamy chocolate like Nutella.

Chocolate ice cream. 1st option

(Warning: chocolate is not allowed for the GAPS diet)

Ingredients:


500 gr of date paste (250g of dates pitted and 250 ml of water)
25g cocoa butter or coconut butter
30g cocoa powder
 

Instructions:


Prepare dates puree as shown in this recipe.
Gently melt butter.
Mix the puree with the butter and cocoa powder.

Cream: the result of this mixture is a delicious chocolate cream spread  for pancakes, bread, etc.

Ice cream : Pour into ice cream maker and mix until a ice cream texture is obtained (usually about 30 minutes)

Serve immediately or keep in the freezer or fridge. If you keep it in the fridge, it must be put back into the ice cream maker before serving. If you keep it in the freezer, leave a few minutes to ambient temperature before serving.

Chocolate ice cream. 2nd option

(Warning: chocolate is not allowed for the GAPS diet)

Ingredients:

400 gr coconut milk (with cream)
20 pitted dates
3 tbsp cocoa powder

Instructions:

Blend all the ingredients in a blender.
Pour into ice cream maker and mix until a ice cream texture is obtained (usually about 30 minutes)
Serve immediately or keep in the freezer or fridge. If you keep it in the fridge, it must be put back into the ice cream maker before serving. If you keep it in the freezer, leave a few minutes to ambient temperature before serving.

Comments:
I've used Deglet Nour dates, maybe with other kind of dates you will need a smaller amount.

Raspberries ice cream

Ingredients:


150 gr date paste
400 gr raspberry puree
20 gr coconut butter
 

Instructions:

Prepare dates puree as shown in this recipe.
Gently melt butter.
Mix the puree with the butter and raspberry puree.
Pour into ice cream maker and mix until a ice cream texture is obtained (usually about 30 minutes)
Serve immediately or keep in the freezer or fridge. If you keep it in the fridge, it must be put back into the ice cream maker before serving. If you keep it in the freezer, leave a few minutes to ambient temperature before serving.
